The still lifes in Albert Anker's oeuvre are of all things considered his most modern works. As in the present painting, they are a combination of simple subject matter with a painting style of the highest artistic skill and subtle colouring. The work "Herrings" shows an atmospheric beauty, although the pictorial motif is simple basic foodstuffs such as fish, bread and beer. The selected objects are carefully placed on a picture-parallel wooden table in the lower third of the picture. Further, the individual objects are mostly placed in a parallel rhythm to each other like the two herrings, knife and fork or carafe and glass. The shapes stand out against the monochrome background, a very deliberate and modern-looking composition. The painting is comparable to the work "Beer and Radish", painted a year earlier, in 1898, which is now in the Kunstmuseum Bern. It is one of the last still lifes Albert Anker painted in oil. Anker noted in a notebook from 1899: "14 Oct. à Hans Rummel, nature morte, des harengs et de la bière." Dr. Hans Rummel was married to a childhood friend of Anker's wife Anna and lived in Biel. "Das Stillleben ist der Prüfstein des Malers." (Edouard Manet)
Ausgerechnet die Stillleben in Albert Ankers Œuvre gelten als seine modernsten Werke. Sie sind wie im vorliegenden Gemälde eine Verbindung von schlichter Thematik mit einer Malweise von höchstem künstlerischen Können und subtilem Kolorit. Das Werk "Heringe" zeigt eine atmosphärische Schönheit, obgleich es sich beim Bildmotiv um einfache Grundnahrungsmittel wie Fisch, Brot und Bier handelt. Die ausgewählten Gegenstände sind auf einem bildparallelen Holztisch im unteren Drittel des Bildes sorgfältig platziert. Weiter stehen die einzelnen Gegenstände meist in einem parallelen Rhythmus zu einander wie die beiden Heringe, Messer und Gabel oder Karaffe und Glas. Die Formen heben sich vom monochrom gehaltenen Hintergrund ab, eine ganz bewusste und modern wirkende Komposition. Das Gemälde ist mit dem um ein Jahr früher, 1898, entstandenen Werk "Bier und Rettich" vergleichbar, welches sich heute im Kunstmuseum Bern befindet. Es ist eines der letzten gemalten Stillleben Albert Ankers in Öl. Anker vermerkte in einem Notizbüchlein von 1899: "14 Oct. à Hans Rummel, nature morte, des harengs et de la bière." Dr. Hans Rummel war mit einer Jugendfreundin von Ankers Frau Anna verheiratet und wohnte in Biel. Von der Tochter Fanny, dem Patenkind von Anna Anker, malte Anker 1875 ein Portrait
